There are some dishes each Chinese chef knows how to prepare. We listed those in our book. Chinese classic menu dishes, like sweet and sour pork, or chicken, Yangzhou fried rice ( stir fried rice with assorted meat and vegetables ), stir fried beef with green peppers and onions, hot and sour soup, stir fried noodles chop suey, Egg and tomato soup, etc.
To learn their vernacular terms is not easy and can require some tongue breaking exercise.
If you learn the terms, the reward is significant. It means you are an expert, and the chef treats you as such.
